Method

  1. Make the filling

    Slice 140 g of chilled cooked chicken. Toss the chicken with 10 g lemon juice and 2 g olive oil.

  2. Assemble two sandwiches

    Divide the chicken between 140 g of ready-to-eat wholemeal bread to make two sandwiches per portion. Serve cold. For a packed lunch, keep the bread separate until eating if you prefer it firm.

Make it lunch tomorrow

Use cooked chicken that was cooled and refrigerated within two hours of cooking. Eat within 48 hours of its original cooking time; assembling this meal does not restart that clock. Keep chilled during storage and transport. Follow an earlier use-by date where applicable.
