
Cold chicken & potato bowl
No cooking needed
Chilled chicken and cooked potatoes with lemon, garlic and olive oil. A seven-minute lunch when both chicken and potatoes are already cooked.
The 7 minutes starts with fully cooked, chilled chicken and plain cooked, chilled potatoes. Cooking and cooling both happens beforehand. Serve cold; no reheating or appliance is needed.
Method
Cut the cooked ingredients
Cut 140 g of chilled cooked chicken and 350 g of chilled cooked potatoes into bite-sized pieces.
Dress and serve cold
Finely grate the garlic and mix it with the measured lemon juice and olive oil. Toss with the chicken and potatoes. Divide into equal portions and serve cold.
Make it lunch tomorrow
Use cooked chicken and potatoes that were cooled and refrigerated within two hours of cooking. Eat within 48 hours of their original cooking time; assembling this meal does not restart that clock. Keep chilled during storage and transport. Follow an earlier use-by date where applicable.

Recipe notes
- Use plain cooked chicken without a sauce or coating. The weights here are cooked weights, so do not substitute the same weight of raw chicken.
- Plain steamed or boiled potatoes are the basis of the nutrition estimate. Potatoes cooked with oil or other ingredients need an adjusted estimate.
