A soft baked oat pudding with banana, cinnamon and egg whites, served with plain skyr. Stir with a fork and bake in the Ninja Air Fryer.

Use one shallow oven-safe dish per portion, about 12 cm wide and at least 500 ml. Keep the mixture no deeper than 3 cm and leave room for air around the dish.
Method
Mix the pudding
For four portions, use half of every listed quantity per batch. Mash the banana for this batch with a fork. Stir in the egg whites, oats and cinnamon until evenly mixed; do not whip. Leave for 5 minutes so the oats absorb some liquid. Keep the skyr chilled for serving.
Prepare the dishes
Use one oven-safe dish per portion. Brush with the measured oil and divide the mixture equally between the dishes, keeping it no deeper than 3 cm. With crisper plates fitted, preheat the required Air Fryer drawers on AIR FRY / 160°C / 3 minutes while the oats soak. Put one dish in each drawer with space around it.
Bake until set
AIR FRY / 160°C / 20–25 minutes. Check from 20 minutes: the centre must be set rather than liquid and reach 75°C for 30 seconds. If needed, cook for another 2–3 minutes and check again. Leave in the dish for 5 minutes before serving.
Serve with skyr
Divide the chilled skyr for this batch equally alongside the puddings. For four portions, repeat the baking with the second batch; prepare that mixture while the first batch cooks.
Keeping the rest
Cool promptly and refrigerate within two hours. Keep the skyr separate and eat within 24 hours. Eat chilled or reheat the pudding once until steaming hot throughout before adding cold skyr.

Recipe notes
